If you know me, then you know it’s important that this exists. After my roommate told me she had heard about it, it was in my hands in 20 minutes.
My friend Maggie brought back this spread called Speculoos for me from Belgium, and I’ve never tasted anything like it. It’s ground up cookie butter, made from essentially Biscoff cookies. It’s truly amazing, and way different (and honestly probably better) than any nut butter or even Nutella. It’s nearly impossible to find in the U.S., so the fact that Trader Joe’s is now making their own is SUPER exciting. Having this available right down the block from me? I can’t even describe the excitement that went through me. So obviously I was hoping that when I got home and tasted it, it would be just the same as the real stuff.
And it is. In a blind taste test I’m sure I would never be able to tell the difference. Someone figured out how to make cookies taste even better than their regular form. Think a handful of cookie crumbs, but creamier.
Put it on pancakes or waffles, eat it plain, or do what I plan to do: bake with it.
And now I can make my own speculoos milkshake! No need to trek to Edzo’s for one.
Expect many speculoos recipes to come.
